Using a chemical-free Swiss water process, we naturally decaffeinate the beans, removing 99 percent of the caffeine.

Inspired by our family vineyard in California, we grow our coffee beans on trellises, similar to how grapes are grown for wine. This unique process exposes the trees to sunlight and aeration, enhancing the development of the cherries and resulting in a naturally sweet taste. Rather than relying on color alone, we test the cherries for pH level, sugar concentration, and titratable acid to determine the optimal maturity for picking.
